More than 90% of US homes have microwaves. Although immeasurably convenient, they're not foolproof when it comes to food safety. Here's how to use your without harm:
Cook leftovers until they're steaming hot. They can still harbor dangerous bacteria if not warmed to 165°F throughout. If there are cold spots, stir, rotate, and reheat.
Ignore microwave instructions calling for standing or resting time. Microwaves cook from the outside in, usually to a depth of only 1 to 1 1/2 inches. When a food rests, it's using conduction to heat more thoroughly.
Use microwave-safe cookware. Avoid dishes or containers that are metallic, including decorative paint and trim, which can cause sparks to form when heated. And skip plastic take-out bowls and food containers, as well as plastic wraps and foam trays, such as those used for ground beef and turkey: They may leach harmful chemicals into foods when heated.
