Salmon Burgers with Rice and Arugula

This is not a recipe; it's simply something I picked up at the fish counter and quickly cooked on the stovetop. The market had a lot of varieties, and I chose Asian burgers, seasoned with soy sauce, sesame seeds and scallions. I'd like to take a stab at making my own from scratch, but for a busy day that included a late-afternoon trip to the grocery store, these offered a nice break from dinner preparations. They're a shortcut that doesn't feel like one, and each burger was ample enough to serve 2.
I heated oil in a skillet over medium-high and browned the burgers on one side. After about 5 minutes I flipped them and browned the other side; the centers were still not done (the burgers change from red and moist to pink and flaky), so I lowered the heat and covered the skillet to cook them through. I served these with baby arugula and rice, both drizzled with soy sauce and sesame oil.
